Haven't played this game, but I have encountered it's legendary themes from time to time, mostly while playing Smash Bros and Mario Kart.
Ranking is calm theme played after the race has finished and the rankings are announced.
Big Blue is the most iconic track from this game, being used several times over in the Smash Bros Franchise.
insaneintherainmusic has enhanced this track to perfection in his jazzy cover. The saxophone and jamming guitar is just such perfect additions:

That said, Big Blue - Mario Kart 8 Deluxe OST - YouTube also includes the same instruments of this cover. I think this sounds a lot more interesting with the added depth and instruments comapred to the original, which I find somewhat flat.

Red Canyon truly slaps, with its pulsating electronic bassline giving it an energetic vibe.

Yeah I just put a cover on top
I like Red Canyon better than Big Blue due to its high-energy. However I'll concede that big blue is a more diverse and interesting composition. Might just be that it feels overplayed to me honestly and keep in mind that I'm rating the original, not the one featured in Mario Kart.
